Ingredients:
- 2 Eggs
- 1 Lemon (juiced)
- 200g Cottage Cheese
- 2 Tortillas
- 100g Whole Brown Lentils (cooked)
- 50g Strawberries (sliced)
- 50g Blueberries
- 100g Sour Cream
- 100g Apple Sauce
- 50g Kale (chopped)
- 2 tbsp Peanut Butter
- 50g Raisins
- 50g Granola
- 1 tbsp Honey
- 50g Tomato Puree
- 100g Garbanzo Beans (cooked)
- 50g Cheez-it

Instructions:
- In a bowl, mix the cottage cheese, lemon juice, and chopped kale until well combined.
- In a separate bowl, whisk the eggs and cook them in a non-stick pan over medium heat until scrambled.
- Spread peanut butter on each tortilla, then layer with the cottage cheese mixture, scrambled eggs, cooked lentils, strawberries, blueberries, sour cream, apple sauce, raisins, and garbanzo beans.
- Drizzle honey over the top and sprinkle granola and crushed Cheez-it for crunch.
- Roll the tortillas tightly and slice them in half to serve.
