Ingredients:

  • 2 Eggs
  • 1 Lemon (juiced)
  • 200g Cottage Cheese
  • 2 Tortillas
  • 100g Whole Brown Lentils (cooked)
  • 50g Strawberries (sliced)
  • 50g Blueberries
  • 100g Sour Cream
  • 100g Apple Sauce
  • 50g Kale (chopped)
  • 2 tbsp Peanut Butter
  • 50g Raisins
  • 50g Granola
  • 1 tbsp Honey
  • 50g Tomato Puree
  • 100g Garbanzo Beans (cooked)
  • 50g Cheez-it

Kitchen Tools Needed:

  • Stove Top
  • Blender
  • Food Processor

Instructions:

  • In a bowl, mix the cottage cheese, lemon juice, and chopped kale until well combined.
  • In a separate bowl, whisk the eggs and cook them in a non-stick pan over medium heat until scrambled.
  • Spread peanut butter on each tortilla, then layer with the cottage cheese mixture, scrambled eggs, cooked lentils, strawberries, blueberries, sour cream, apple sauce, raisins, and garbanzo beans.
  • Drizzle honey over the top and sprinkle granola and crushed Cheez-it for crunch.
  • Roll the tortillas tightly and slice them in half to serve.
